Sorghum flour

Sorghum flour, also called "durra flour", is fine to the touch and has a slight hygroscopy. The starch granules look like those of corn, with which sorghum shares much of the nutritional profile. Its aroma is rather neutral, with a sometimes sweetish taste, and is therefore ideal in recipes where flour should not overwhelm the delicate aromas of the basic ingredients. It is well suited to sweet and savory preparations, or to thick sauces and sauces
